Zucchini Bites

Zucchini Bites (adapted from The Naptime Chef)

1 cups zucchini, grated (1 large zucchini)
1 egg
1/4 c. yellow onion, diced
1/2 cup cheddar cheese
1/4 c. parmigiano
1/4 cup bread crumbs
Salt and Pepper

1. Preheat oven to 400F. Spray a mini-muffin tin with non-stick spray
2. Grate the zucchini and pat dry.
3. In a bowl, mix together the egg, onion, cheeses, bread crumbs, zucchini, salt and pepper.
4. With a spoon, fill the muffin cups to the top.

5. Bake 20 minutes, or until the top is browned and set.
