
I made these little lemon pie tarts for one of my intern's birthdays. Karla always has a big smile on her face and is a sunny, positive person, and a wonderful young therapist!
Begin with Keebler individual graham cracker crusts. (6 per package)
Mix together: 8 oz. cream cheese, 1/2 cup sugar and 1 teaspoon vanilla and fill tarts half way.
Top with lemon curd. Chill.
Roll out your favorite sugar cookie dough, cutting out six suns, and cutting a circle out of the center. When cookies are baked and cooled, heat a tiny bit of corn syrup for 10 seconds in the microwave, and brush a light layer on each cookie, immediately topping with yellow sugar sprinkles or yellow sanding sugar.
Melt 4 oz. of chocolate candy melts and using a pastry bag (or ziplock with a tiny corner cut off), pipe sunglasses on chilled tarts.

Top tart with cookie and serve.
