
I am always on the lookout for new ways of making chicken salad, as I make some once a week, and often have a scoop for lunch. I have several I alternate, but this was a new and delicious blend of flavors I love that I found on Jenna Blogs.
2-3 c. chopped cold chicken
1 t. minced garlic
a splash of lemon juice
a splash of olive oil
salt and pepper
mayo to taste (I kept mine fairly dry)
LOTS of parmigiano
DELICIOUS! It goes together in seconds, and there is no celery or onion to chop! Brad liked it so much, we had it for a "no cook" dinner.

I make one that includes pesto and pine nuts-I love it on a baguette!
