I had never cooked a beef brisket, so I tried this rub.

1 4 to 5 pound beef brisket, trimmed of most fat
1/2 cup packed brown sugar
2 T. finely ground espresso powder
3 tablespoons Worcestershire Sauce
3 cloves garlic, minced
2 tablespoon chili powder
2 tablespoon ground black pepper
1 tablespoon yellow mustard
1 teaspoon salt
2 teaspoon cumin
1/4 teaspoon nutmeg
Mix together all ingredients except the brisket. Place the meat on a large piece of heavy foil, in a roasting pan. Rub both sides of the brisket with all of the spice mixture. Wrap tightly in the foil and marinate overnight.
Heat oven to 275. Poke foil with a fork two or three times. Place foil-wrapped brisket in roasting pan in the oven for slow cooking. It should take about 4 hours.

Remove meat from oven. It should be fork-tender all the way through. Pour off meat juices. Add 1/4 c. of BBQ sauce to meat juice in foil. Slice brisket against the grain and place in a clean pan. Top with BBQ sauce/juice and return to oven. Cook for another 20-30 minutes uncovered. It should be tender, juicy and delicious. It will make some great sandwiches later too!

Looks wonderful! We are staying in a B&B tomorrow nite in Camden Maine owned by a lovely sounding italian couple! They have lived in the US since '96. She has lost none of her accent, can hardly wait to meet them.
