
This was a hit at our house! First I made a parmigiano sauce, then added half a can of pure pumpkin, and served it over cheese tortellini with some sage leaves fried in butter for garnish!
4 T. butter
3 T. flour
1/2 t. salt
2 c. low fat milk
3/4 c. grated parmigiano
1/2 can pure pumpkin
1 lb. cheese tortellini
Melt butter flour and salt. Add milk and stir over medium heat until thick and first bubble appears. Remove from heat. Stir in parmigiano and pumpkin. Serve over hot tortellini. Sage garnish is optional but adds a great flavor.
