
This was a quick Sunday night dinner.
1 lb spaghetti
6 oz mascarpone (room temp)
3 T. butter
zest from one lemon
2 T. butter
6 oz. langostino (or shrimp)
Cook pasta. Saute langostino in melted butter. Put 3 T. butter and mascarpone in a large bowl, and toss well with hot pasta. Toss in a little parmigiano. Serve pasta with langostino on top. Garnish with chopped Italian pasta.
