Bacon-Chicken BBQ Bites


1 T. olive oil
2 boneless, skinless chicken breasts, cut into chunks (about 16 pieces per breast)
10-11 slices of bacon


1 1/2 c.brown sugar
1/2 c. chile sauce
1/2 c. rum
1/4 c. soy sauce
1/4 c. ketchup
1/4 c. worcestershire sauce
2 cloves garlic, crushed
black pepper, to taste

1. Cut chicken into chunks. Bake in the olive oil for 10 min. at 350.


2. Cool slightly, and wrap each chicken chunk in one-third slice of bacon. Secure with toothpick. Bake another 10 min. or until bacon is almost cooked. Meanwhile make sauce.


3. Combine all sauce ingredients in medium sauce pan. Bring to a boil, while stirring constantly. Let sauce reduce on low heat for 10-15 min. Pour over chicken, and bake another 10 min.
