Buffalo Balls

These tasty little morsels are a great do-ahead appetizer. I made some for Super Bowl Sunday, to try out the recipe for the baby shower I am hosting next month. now there are 80 in my freezer!

6 oz. softened cream cheese
1 rotisserie chicken, shredded, and finely chopped (or 3-4 c. chopped cooked chicken)
2 c. grated chedder
2 green onions, chopped
1/3-1/2 c. hot wing sauce (Frank's Red Hot Wings)

Mix ingredients together in large bowl. Chill.


Roll into 1" balls and place on a parchment-lined cookie sheet. Chill for a few minutes.


Prepare the following for dipping:
1 c. flour
4-5 eggs, beaten
4 c. crushed cornflakes

I put the flour in a paper plate for rolling, then dip balls in beaten egg, and coat in cornflake crumbs. Return coated balls to cookie sheet.


*** If making ahead, flash freeze balls for 30 minutes, then store in a zip lock bag for up to a month in freezer.

Bake at 350 for 20-25 min. (If frozen, bake for 25-30 min.)

Serve with blue cheese dip for dipping.

YUM!!!! Wish I was coming to the baby shower.......I LOVE your cooking and I love to play games, so with you as "Hostess", its a win-win. =)
