Holiday Food 2014

On Christmas Eve, since we always have seafood, we did something different this year:
Lobster Mac and Cheese.


1 pound pasta
1 lb. cooked lobster, cut in small pieces
4 c. bechemel
8 oz. mascarpone
1 lb. white cheddar, grated
8 oz. gruyere, grated
1/2 c. toasted breadcrumbs

While pasta is cooking, make bechemel. Take sauce off heat and whisk in mascarpone, then the other cheeses. Stir in lobster, top with bread crumbs, and bake at 375 for 25 min.

On Christmas Day, our traditional Eggs Benedict breakfast! (with bacon this year)


We do NOT make a big Christmas dinner, as that breakfast keeps us full all day! In the evening, we put out some cheeses, salami and dip, saving room for dessert.

This year I made a rum bundt cake with Italian pastry cream.

I'm going to put the lobster mac and cheese on my 'must cook!' list. Everything looks so delicious. Unfortunately my diet will start soon per doctor's orders! But I'm still on vacation so I can cook it before I start the diet!
