Green Bean Salad

So simple. So delicious. So Marcella.

All you do is find some nice fresh green beans, snap them and soak them in water for about 10 minutes.

Boil them in salted water until tender but not crunchy.
Toss them with some nice olive oil, salt and a squirt of lemon juice. (Be sure to stop and smell the olive oil as it hits the hot beans.)
Eat the salad while it's still a bit warm.

Your beans look lovely Jan, all of a size and choice. Did you buy them at Publix? Green beans have been one of my greatest disappointments in this country. Rarely, rarely have I had beans that approach the flavor of beans in Italy, especially those from the farms in the Venetian lagoon, that are of a firmness of texture, an almond-like nuttines, and whose coupling with olive oil and sea salt may be the most fully accomplished consummation of the marriage of these elements from soil and sea.

It's really funny that you ask. First I got beans at our local farmers market but after too many days in my refrigerator they were dry and tasted old. So, I went to Publix--no green beans at all! I found these, and they were really delicious, at Walmart. They were in a steamable bag, already snapped. They had no fresh ones in bulk there either.
