Thankfully on Monday night we will be at my cousins and I just have to bring Amy's Smoked Paprika Roasted Chicken.The second Seder will be at my house and the guest list is growing daily - started at 7 and now up to 16! So, I will be getting up VERY early tomorrow morning to do a massive foodshop and then will have a cooking marathon over the weekend. Thank you to Aunt Jackie ,especially for the Chicken Soup & Matzoh Balls, for all of the help! No way could I have done the Soup (nor would it have been as good as hers) at this late date. Sorry Jeff, there will be no Gefilte Fish since you are the only one who eats it :)!</p>

For about a week, I would enter from the passenger side and crawl over the console -  until I realized that I could manually unlock the Driver's side door. DUH!</p>

<p>How do these people survive? </p>

ONE<br />
Recently, when I went to McDonald's I saw on the menu that you could have an order of 6, 9 or 12 Chicken McNuggets. </p>

<p>I asked for a half dozen nuggets. </p>

<p>'We don't have half dozen nuggets,' said the teenager at the counter. </p>

<p>'You don't?' I replied. </p>

<p>'We only have six, nine, or twelve,' was the reply. </p>

<p>'So I can't order a half dozen nuggets, but I can order six?' </p>

<p>'That's right.'   So I shook my head and ordered six McNuggets (Unbelievable but sadly true...)</p>

TWO <br />
I was checking out at the local Walmart with just a few items and the lady behind me put her things on the belt close to mine. I picked up one of those 'dividers' that they keep by the cash register and placed it between our things so they wouldn't get mixed. </p>

<p>After the girl had scanned all of my items, she picked up the 'divider', looking it all over for the bar code so she could scan it. </p>

<p>Not finding the bar code, she said to me, 'Do you know how much this is?' </p>

<p>I said to her 'I've changed my mind; I don't think I'll buy that today.'   </p>

<p>She said 'OK,' and I paid her for the things and left. </p>

<p>She had no clue to what had just happened. </p>

THREE <br />
A woman at work was seen putting a credit card into her floppy drive and pulling it out very quickly. </p>

<p>When I inquired as to what she was doing, she said she was shopping on the Internet and they kept asking for a credit card number, so she was using the ATM 'thingy.' </p>

<p>FOUR <br />
I recently saw a distraught young lady weeping beside her car. 'Do you need some help?' I asked. </p>

<p>She replied, 'I knew I! should have replaced the battery to this remote door unlocker. Now I can't get into my car. Do you think they (pointing to a distant convenience store) would have a battery to fit this?' </p>

<p>'Hmmm, I don't know.  Do you have an alarm, too?' I asked. </p>

<p>'No, just this remote thingy,' she answered, handing it and the car keys to me.  As I took the key and manually unlocked the door, I replied, 'Why don't you drive over there and check about the batteries.  It's a long walk....' </p>

FIVE <br />
Several years ago, we had an Intern who was none too swift. One day she was typing and turned to a secretary and said, 'I'm almost out of typing paper.<br />
What do I do?'  'Just use paper from the photocopier', the secretary told her.<br />
With that, the intern took her last remaining blank piece of paper, put it on the photocopier and proceeded to make five  blank' copies.   (Brunette, by the way!! )</p>

A mother calls 911 very worried asking the dispatcher if she needs to take her kid to the emergency room, the kid had eaten ants. The dispatcher tells her to give the <br />
kid some Benadryl and he should be fine, the mother says, 'I just gave him some ant killer......'   <br />
Dispatcher:  'Rush him in to emergency!' </p>

        <![CDATA[<p>Truthfully, I have little energy to Blog tonight. My heart goes out to my dear friend,whose child is struggling with an addiction problem. After a recent relapse she is in a Rehab again. Why do good, smart kids do stupid things? I have worked for years with Addiction related problems, but it is an entirely different ballgame when it hits close to home. How to answer the question "what would you do"? It surprises me how quick people are to give advice and pass judgement. The truth is, I don't know what I would do. I can't even imagine! She is doing all of the right things for herself and I will always be there to support her. And, I will stop complaining about where Adam will choose to go to Grad School and how much money Jordan spends!</p>

<p>So, what did I do to cheer me up? Looked at more cat pictures from work. Patrick & Shannon are another brother and sister pair who live on the third floor. Though they have a comfy lounge with beds and toys:</p>

I am embarassed to admit that this will be the third Lifetime Membership I am pursuing - one at 27, one at 40 and now (yikes) at 56. I am not thinking of this as a diet, but rather as a change in my eating habits.No sense beating myself up over why I need to do this again or obsessing about the 34 pounds that I need to lose. I did some healthy foodshopping over the weekend and I think that I will just focus on getting through tomorrow and the next day and the day after that. After a few weeks, it becomes second nature.I almost put this off until after Passover, but thought "when is there not some holiday,special occassion or celebration" to worry about? The key is to learn how to manage these things - right? Portion control will be a challenge, and I am not sure that I can drink 10 glasses of water a day.Ibt, I am going to give it my best shot!</p>]]>

        <![CDATA[<p>This week's recipe was selected by Jan and was a real winner. I could not find Turkey Thighs anywhere and wound up using 3 Turkey Drumsticks and added a handful of peas at the end as Jan suggested. I served it over 7 grain rotini pasta.</p>

<p>Braised Turkey Thighs</p>

<p>4 tablespoons olive oil<br />
2 turkey thighs<br />
1 cup dry white wine<br />
2 large onions, diced<br />
4 medium carrots diced<br />
3 medium stalks of celery diced<br />
8 oz. Mushroom, sliced<br />
4 medium cloves garlic minced<br />
1 1/2 cups chicken stock or water<br />
2 bay leaves<br />
1 28 oz. Can crushed tomatoes<br />
parmesan cheese rind (if available)</p>

<p>¼ cup chopped parsley for garnish</p>

<p>Pre heat oven to 325<br />
Heat 2 tbs oil in a Dutch oven, over medium high.<br />
Salt and pepper both sides of the thighs.<br />
Brown them, about 6 minutes each side, in the oil.<br />
Remove from pot. Pour off all the fat.<br />
Add the next 2 tbs to the pot to get hot. Then add the onions, carrots and celery and cook about 7 or 8 minutes until soft. Add the mushrooms and garlic for another couple of minutes. Add the wine and deglaze the pot (scrape up the brown bits left on the bottom).<br />
Mix in the stock or water, the crushed tomatoes, bay leaves and more salt and pepper. Add the cheese rind, if you have one. Remove the skin from the turkey thighs and return them to the pot, nestling them down into the liquid. It should just cover the thighs. Bring it up to a boil and then put into the oven with the lid on.</p>

<p>Cook until the meat is falling off the bones—about an hour and a half—maybe 2.</p>

<p>You can get all the meat off and serve it in the sauce or just cut large pieces off. Don’t forget to remove the cheese rind and the bay leaves.<br />
Great over hearty pasta, sprinkled with the parsley and some grated parmesan.</p>

        <![CDATA[<p>My friend Peggy and I usually get together once a month to catch up.She & I have been friends from our days with Masterman Home & School. Now our youngest kids are together at Penn State. We usually try one of the many Pubs that have sprung up in revitalized neighborhoods in South Philly.Last week we returned to one of our favorites, SPT, located in the newest "up and comming" neighborhood where there has been an influx of young singles/families and a healthy dose of college students (particularly those attending the University of the Arts).The proximity to Downtown has made South Philadelpia a very popular place to live.</p>

<p>The SPT has been around as a corner bar for 50 + years.<img alt="IMG_1332.JPG" src="http://www.slowtrav.com/blog/scg/IMG_1332.JPG" width="490" height="367" /></p>

<p>Two years ago new owners bought the property next door and expanded the dining room so that food can be served.</p>

<p>They have a great selection of beer along with wonderful food. I chose the Mushroom Gorditos with Queso Fresco<br />

        <![CDATA[<p>I really can't find the words to describe how much I enjoyed the Slow Travel Get Together. How lucky was I to stumble upon this website in 2006 when I was planning a trip to Italy? At the time, all I knew was that 1. I wanted to plan my own trip and 2. I wanted to stay in an apartment rather than a hotel and 3.rather than seeing all of the tourist sights,I wanted to feel a part of the local scene.This is how we often traveled in the U.S. Little did I realize that there was an entire community who shared this travel philosophy. It was easy to stay involved with such like minded people long after our trip. To meet so many people who I have come to think of as friends in person was a special treat! A huge thank you to the organizers of this event is in order (Jane & Ken,Marcia and Dave,Shannon, & Palma & Brad).Though there might have been glitches I am unaware of, the weekend seemed to flow smoothely.The combination of food,friends and fun was perfect!</p>

<p>I had never been to Southern California and loved San Diego - so different from the east coast. Loved the view from our room too.<br />

<p>Before I knew it, it was Monday morning and time to head to the Airport for our trip home. Not sure when my next Europe trip will be, but I am sure that I will be attending another Slow Travel Get Together!</p>]]>

Though Lehigh is the underdog we will be cheering them on tonight. As Zah says, there is a first time for everything! We are so proud of Zah and wish him the best of everything - tonight and always!</p>

<p>It is exciting to watch a former Masterman Student play in an NCAA Tournament. Who says that smart kids cannot be outstanding athletes? Go Zah!</p>]]>

        <![CDATA[<p>Back from a long weekend in San Diego for the second Great Slow Travel Gathering. It was a perfect weekend, thanks to the wonderful organizing of Shannon, Marcia & David, Jane & Ken,Palma & Brad. I can't quite put into words how wonderful it was to finally meet people in person who I have come to think of as friends over these past 4 years. A special thanks to my roomies - Teaberry, ColleenK and JGK-for welcoming this newbie to ST GTH's! Really looking forward to future Get Togethers!</p>

<p>I am way too tired to write more coherently about the Get Together, but I did not want to break my momentum in this March Madness. Between daylight saving time and readjusting to EST, I am really beginning to fade and it is only 3:45 p.m. Scheduling this to post tomorrow. Need to save some energy for Foodshopping after work and dinner with Adam. Early to bed for me!</p>

        <![CDATA[<p>One of the federal requirements in Long Term Care is to provide a home like environment for residents.This is particularly a challenge in a large, old facility which was originally built as a Hospital in the mid 1900's. The fact that we are a County Facility with a 97% Medicaid population leaves us with little funding for major renovations.Mostly we have met this requirement by creating comfy lounges on each floor,using artwork to decorate institutional looking walls,decorating resident rooms and encouraging people to bring favorite personal items to individualize their rooms.</p>

<p>Over the last few years we have talked about adding Pets to the mix of our efforts to create a home like environment.The health benefits of Pets, particularly in lowering blood pressure, is well documented in the literature.  There was lots of dicussion over what types of pet(s) to get and who would be responsible for their care. After MUCH discussion, we decided to get a cat for one of our 10 Nursing Units. Off we went to the local shelter in search of a kitty. It was a tough decision - they were all so cute and loveable. We told the staff which cat we had finally decided upon.  With a pained expression, she responded "oh, Tom & Jerry are siblings. they have been together since birth and have to be adopted together". It took us about 10 seconds to agree to take both of them!</p>

<p>Well, these two kitties were an instant hit with both residents and staff. Jerri is the one with more white on her face. People were coming from all over the building to visit and play with these two charmers. They are both cuddly and playful. Their antics bring smiles to the faces of even the most difficult people (residents and staff alike). We have since added 5 more kitties  for 3 other Units. Over the next two months we will add 4 more cats, so that each unit in the building has 2 ( well, except for the Dementia Unit which has its own Cat). It the middle of the most stressful days, I love taking a break to visit these Charmers!</p>]]>

I found that the meat was falling off of the bone, so I chose to serve it more like a stew. A friend had brought over some oven roasted potatoes with onions. I wasn't able to find Fish Sauce in my local market, so I had a good reason to visit a large, Asian Market that is nearby. <p>Cashew Chicken Stir-Fry</p>

<p>cooking oil<br />
2 to 3 cloves of garlic, minced<br />
1 yellow onion, finely diced<br />
4 boneless chicken breasts, cut into bite-size cubes or strips<br />
2 Tbsp. fish sauce<br />
3 Tbsp. oyster sauce<br />
1 tsp. sugar<br />
1 large red bell pepper, diced<br />
1 yellow squash, diced<br />
1 zucchini, diced<br />
8 oz. jelly, oyster or shitake mushrooms, sliced<br />
red-eye chili pepper to taste,seeded and finely chopped<br />
1/3 cup chicken broth<br />
1 tsp. corn starch(optional)<br />
1/2 cup unsalted cashews</p>

<p>Heat 2 to 3 Tbsp. of vegetable oil in a large skillet. Add garlic and onions and stir-fry until browned. Sear chicken on both sides for about three minutes(I use the sides of the skillet).(The chicken should be almost fully cooked at this point, if need to, cook for longer). Add fish sauce, oyster sauce and sugar and mix for another minute. Add vegetables and stir-fry for a minute or two. Add the chicken broth, cover and simmer for three to four minutes until vegetables are tender and chicken is fully cooked.</p>

<p>If you wish to thicken the sauce, use a slotted spoon to transfer the chicken and vegetables to a plate, and add cornstarch to the sauce whisking for a minute or two until sauce is thickened. Transfer the chicken and vegetables back to the skillet to keep warm.</p>

<p>Serve the stir-fry over your favorite rice (I make white rice) and top with cashews.</p>

        <![CDATA[<p>I hope that as this entry posts it is a beautiful,sunny day in San Diego and that this winter is but a distant memory. This was,by far, the worst winter I can remember (including the 30" snowfall in Jan. 1996).Two major winter storms less than one week apart. The first dumped 23.5 " and the second dumped another 18".Personaaly I don't think that there is anything pretty about the snow. Perhaps if I had a different job that did not necessitate 4 sleeps in the Nursing Home I would feel differently.</p>

<p>Though the city did a stellar job with street cleaning, major storms in the city neighborhoods are a nightmare. There is nowhere to put that much snow! Getting to & from your car is sort of like mountain climbing - that is if you were lucky enough to find a place to park.</p>

This is my adorable neighbor who helped his parents shovel a walkway after the 2nd storm. Note the amount of snow you have to get over to get into the street/your car. </p>

<p>DH had many days off from school because of this storm. He was nice enough to shovel a path from our front steps to the street so that I would not have to climb over snowbanks early in the morning :)! Note the two snow covered cars which remained in front of MY HOUSE for 3 weeks!</p>
