I'v had a terrible time with the butchers in Paris. The worst is the one just on the corner that we go to two or three times weekly. I quit going to him because when you buy something and cook it after taking all that love and passion for the preparation and your mouth is watering, you are starving, set the table and take a deep breath and relax, to bit into that succulent piece of quail, beef, duck, bla bla bla Then that first bite of meat spoils your evening because the meat is passed, expired, rotton. Is this guy insane. I now have learned that he has a reputation for one being expensive and now selling rotton meat.
I HATE it when people treat you like an idiot because you do not speak their language like a native. The other thing this guy does is double the price one day and then whe he doesn't see you for awhile gives you an extra something. He wouldn't have lasted a week in Florence the thug. I want to go in his shop on Saturday morning when the market is there and he has a line out the door and say, "Bonjour Thierry, c'etait de nouveau gaté la viande que vous nous avait vendu hier soir, ça fait trois fois en un mois. C'etat just pour vous dire, bon fin journée." @%#! Tie!!!
I think I'll go back to being a vegetarian.

I'm surprised that there are crappy butchers in Paris and sorry there's one in your neighborhood.

How does a butcher like this stay in business? You'd think with the French loving food so much he'd be out of business quickly.

I don't speak/read French, but I am guessing that what you would like to say in his shop is not very flattering. How horrible for him to sell anyone rotten meat. He could possibly make someone sick! I hope you find a better butcher or perhaps you should become vegetarian.
