Share a day with an Italian family, see the views, eat the food, pet the dog, welcome in Umbria!
Location: Assisi, Umbria
THE ESSENCE OF ITALIAN FAMILY LIFE IS FOUND IN COOKING.
I spent my childhood in the kitchen helping my mother make not only our everyday meals, but also the elaborate holiday dishes she would prepare for the large groups of relatives who would gather in our dining room throughout the year. Her brothers and sisters would do the same, because if Christmas was celebrated at our house, Boxing Day would be with Aunt Ida, and New Year’s Eve with Uncle Armando.
Much of the social life in Italy revolves around the dining table. School friends and professional colleagues alike often meet for home-cooked dinners, during which they will proudly present their new recipes and comment on a wine from their favorite winery. Individual budget might limit the choice of food and beverage, but everyone shares the same enthusiasm for the national cuisine and has strong opinions regarding its preparation.
Cooking with an Italian Family
As a traveler, you can sample Italy’s famed cuisine in various great restaurants, but cooking at someone’s home offers you a unique opportunity to savor the true Italian flavors and traditions. When Ruurd, my husband, and I opened our B&B in the Assisi countryside, we wanted to share our enthusiasm for Italy’s culinary culture with others. This is why we offer family-style cooking classes. You will learn how to select the best local ingredients in the narrow streets of an Umbrian village. You will use these delicacies - chosen from local small shops or picked up in our own vegetable and herb garden- to prepare an authentic Italian meal. With a view of the garden, our spacious and well-equipped kitchen is a perfect setting for a gourmet experience for you and your cooking companions.
The basic cooking class lasts half a day. We start at the nearby village of Santa Maria degli Angeli, visiting local food shops where you can sample a variety of the freshest traditional local cheeses and cured meats and choose from these for your appetizer. Specialties such as black truffle paté and the finest olive oils, wines, and balsamic vinegars are available for purchase and make lovely gifts.
We then return to the kitchen to start the hands-on portion of the lesson. Here we don aprons, assemble around our old farmhouse table, and begin making ravioli, tagliatelle, or lasagne and their wonderful sauces. Winter might bring inspiration for a risotto or vegetable soup and summer for an eggplant parmigiana or for “sartu”, an exquisite rice timbale. I also try to accommodate any special requests for the preparation of a particular dish.
We also prepare a dessert together: panna cotta with orange infused dates or cantaloupe melon mousse, for example. At the end of the class, you can enjoy your meal outdoors under the panoramic pergola (weather permitting) or by the fireplace in our cozy dining room. You can linger as long as you like to enjoy the scenery, the garden, and, of course, the food.
Cooking classes are available by the day, which means that you are free either to take a single class during your holiday, or more classes covering different subjects, using many of the ingredients produced in our own vegetable and herb garden or bought at local specialty gourmet shops.
Programmes are offered year round for two to six people. This small class size guarantees personalized attention and one-on-one instruction. Lessons are given at a leisurely pace and focus on only a few recipes at a time. Recipes can be reproduced with normal home equipment and printed copies are provided for most recipes to take away with you.
The atmosphere of our classes is friendly and informal, with a blend of traditional and modern Italian cooking techniques. My extended family is Sicilian, so our recipes are based on a mixture of Umbrian and Sicilian dishes re-interpreted for their fresh, light, and simple taste.
All classes include a generous sampling or a complete meal of the food prepared, served with wine/beverage. Please contact us for any additional information you might require. Costs are very reasonable, starting at 120 Euro per person for a minimum of two participants.
Our coking classes have been positively reviewed on Slowtravel, Lonely Planet, Rick Steves, Tripadvisor and a number of perosnal blogs. We have also been mentioned as one of Italy’s top cooking schools in Food and Wine magazine and in a publication of National Geographic entitled “Food Journeys of a Lifetime: 500 extraordinary places where to eat around the globe”. Recent mentions include CTV Ottawa, BBC Travel, The Toowoomba Chronicle, Destinations Travel Magazine, Tastes of Italia, How to Tour Italy Radio.
We also offer accommodation, which is additional and ranges from 45 to 58 Euro/person per night (double room).
