The tenderest aiguillette

Directions: In the small village of sireuil La Genebre, not far from the Font de Gaume cave, on the road between Les Eyzies and Sarlat

The ferme-auberges in this region sure understand potatoes. Your best pommes salardaises are the last ones you tasted.

Even so, my friends and I still salute Le Taulado for serving the nirvana of pommes salardaises.

Every time I come to this lowkey farm-inn, I order the same things. I love my favorite dishes so much I can't bear to change: salades aux (tons of) gésiers, aiguillettes with pommes salardaises.

Not that its farm-fresh foie gras mi-cuit isn't heavenly. I am downright religious about the aiguilettes because one can't even find them in the markets in Paris. Ditto its pommes salardaises. They don't get better than here. In comparison, good foie gras is easier to find.

My stomach has no room left afterwards for its mirabelle pie or prune in wine, even though both fruits are produced by the farm itself.

We also always buy the farm's tins of gésiers and jars of foie gras, for later debaucheries.
