When I had the chance to stay in Italy for a few days after a conference, I booked the cheapest room I could find that didn't involve strangers and bunk beds- Proconsolo Rooms 2, €18 per person/per night. I wasn't expecting much, but I figured we would rather spend our money on food anyway! We were very pleasantly surprised, we had a bedroom in a 4-bedroom apartment with a shared sitting room and a balcony looking directly out on the Duomo. Apparently they own several properties and rent out the rooms- this one was at 13 Borgo Pinti if you are interested. It was a bit Spartan, but clean, quiet, very centrally located, and hey - that view!
