If you visit Udine, we highly recommend this Slow Food-listed restaurant as a place to try some of the unique, hearty dishes of Friuli, along with the excellent wines of the region. Our waiter, whose name I've sadly forgotten, struck a perfect balance of warmth and professionalism, guiding us expertly through the menu and suggesting surprising and perfect wines to accompany each course: a platter of house-cured meats with a light and slightly fizzy ribolla gialla; cjalsons (sweet-spiced giant stuffed pasta) and pasta e fagioli with a sauvignon from Colli Orientali; frittura mista and frico, the local dish transforming potatoes and cheese into a fragrant crisp cake, with a Cabernet from Aquileia that had a whiff of the sea.
