At Cash & Nash they make a whole host of really unusual gourmet pizzas in a wood burning oven. Service is frenetic to slow mostly because the oven is small and the demand high. Pizzas come "spezzate" - already cut - not common in Italy. The choices range from pizza with potatoes to pizza with lardo di Colonata. Full selection of pizza bianca e rosso. Every pizza we have ever had here has been absolutely delicious; some of the best we've ever had. There is a big outdoor area sort of like a parking lot and a small indoor room, always packed. Pizzas here are higher priced than in most places but worth the price in our opinion. This place sort of reminds us that Umbria is culinarily limited... the influence of national or international culinary trends just don't make it across the borders in any form.
