Amazing cooking in an unprepossing locale; to date, one of my 3 best restaurant experiences in Italy.

Directions: It's the Hotel in town, somewhat out of the center, to the S of town.

Cucina povera: home cooking at its best.

Locale: cavernous and antiseptic cafeteria-type hall, seating maybe 150, on the ground floor of a very middling concrete hotel.

Dinner: A vegetable soup, served cool: spinach, celery, potato wonderful, one of the best soups I've ever had. Some chicken that I will probably remember till I die: "chicken breast" was literally that: the breast of a chicken, in a plate, no sauce, no garnish, no vegetable very lightly salted but also some other undefinable seasoning, possibly rosemary but very very light. Contorni: boiled chicory, oil, garlic the tiniest touch, lemon, really wonderful, balanced. Second contorno, French fries -- sound dull? eat yer heart out McDonald's! The perfect fry: almost scalding hot, beautifully crisp outside, fluffy potato inside, ate them all with my fingers but not a trace of oil, didn't even wipe my hands.

Lunch the next day (reorganized my trip to have a second meal here): Primo primo: cirioli al pesto quite wonderful, although not as sharp as the Genoese pesto -- I was explained that the basil's not the same. Secondo primo: bietole alla parmigiana, one of the rare times "alla parmigiana" has made any sense to me. Secondo: lamb with beans, again excellent, if slightly salty (probably perfect for most people, I have a notoriously low tolerance for salt). Roast tomatoes, very good again.

Wine: local red, fine; this is not the place to be drinking Brunello or Amarone.
