Umbrian cooking. Despite tuxedo'd waiters the restaurant is not pretentious, and the prices are in the medium range. Rather good wine list.

Directions: Next to the church of S. Francesco

"Antipasti del Convento", their royal flush: the least successful item the crostino ai fegati C, the best a superb focaccia the size of a Morgan dollar, wonderful dough and flavored only with sage A+, other items scattered in between, good. Primo: umbricelli al tartufo: heavenly fragrance, no stint on the truffle even if I think it was scorzone — but oily: still gets a B+ from me though. Secondo: agnello a scottadito: here, they were careful and not oily at all: also B+.

I had a half bottle of Trebbiano, no dessert; coffee. €35

My rating: a B overall, which would have been a B+ had I not woken up in the middle of the night with salt mouth, an indication that they rely too much on salt to pump up the flavors.
