Directions: Small hilltop town between Montepulciano and Orvieto, about 10 miles west of the A-1 Restaurant only open a year is not well known yet, but will/should be. The food was fabulous, and the wine list strong, and fairly priced. Fabio Rossi knows wine well, and it shows, in his selections and suggestions. Casual and relaxed, but modern. Approx. 12-15 tables. Like being in a home, with a nice central table and bookshelves with wine books. Proper wine glasses. Lovely variety of plates used for service. Every course of two dinners for the two of us was excellent, and beautifully presented. For example, grilled vegatables, artichoke tart, ravioli with porcini, pici with wild boar, lamb chops, tuscan steak. But these are not done in traditional/expected way - they are done wonderfully, in a more modern way. The tastes are pure, the ingredients are clear. This is delicious food. Crescent-shaped tiramisu cake - disappeared in an instant even tho we were full. Service / hospitality was warm, and professional. Fabio Rossi has worked in Rome, London and at Fonteverde (in very nearby San Casciano dei Bagni), and is a wonderful host. Primavera is far better than the restaurant in San Casciano dei Bagni that Fonteverde usually recommends. We wish we were eating at Primavera tonight. We live in NYC, so that is saying alot.
