An excellent place for truffles and fresh water fish.

Directions: On the road between Gualdo Tadino and Nocera Umbra. At Gaifana follow directions for Boschetto until the end of the road.

Well known among the locals for their truffle dishes and fresh water fish specialties, Restaurant La Sorgente, with 41 years of management by the same family, is constantly excellent.

Last time we were there, we had a huge mixed appetizer with great prosciutto, bruschetta and several crisp morsels of deep fried delicacies like mini-mozzarella, mini rice balls in saffron sauce and bread fritters. We go there especially for their cappelletti al tartufo, they are veal-filled small tortellini, made with the thinnest homemade pasta sheets and literally covered by a mound of freshly grated black truffle which apparently had been brought in from the woods that very morning before our lunch. As a second course we had a lovely barbecued trout which they fish from the stream that runs practically outside their door. It had been marinated with rosemary and sage and was served with rocket leaves, grilled tomatoes and the most marvelous extra virgin olive oil from Federici in San Eraclio di Foligno.

We are looking forward our next trip in October to taste the white truffle, which is then in season. The restaurant is on the road between Gualdo Tadino and Nocera Umbra, and it is well worth the trip. Quality-price ratio is outstanding at approx. 30/person before wine for a three course meal with large portions.
