We had a terrific lunch here while on the "Piero della Francesca Trail". Recommended in the Carla Capalbo book.

Sansepolcro is somewhat off the beaten Tuscany track and therefore very attractive in my opinion. Great museums and great food at Ristorante Fiorentino. Carla Capalbo goes on about it for quite a while in lots of detail and with good reason. The meal we had there was excellent across the board. Nice service, not crowded for lunch in August (!).
