Upscale but casual. Moderately expensive. Both regional and haute cuisine dishes.

After two major meals two days in a row in Montréal, we thought we would take it easy on our first night in Québec City. But somehow, L'échaudé was a magnet that I couldn't resist.

Now there are many, many restaurants in Québec City - most of them cater to tourists - although some of them may be good, my instinct was to avoid them and look for the places where the natives dine. And my nose led me here.

When I passed by at 6:30, I was lucky to be able to get a reservation for later that evening - I'd advise reserving in advance.

The menu is split into 2 halves - one of relatively traditional bistro dishes and one of more creative ones inspired by what's available at the market. Very reasonably priced with a good wine list (truth be told, they boast a bit about their wine list and it was good, but it didn't blow me away with rare finds...).

Service was great. We had a very funny exchange with our waitress, a 20-something, relatively hip young lady. Seeing the ubiquitous foie gras on the menu, we asked what she thought of the current foie gras controversy. She responded that she was unaware of it and furthermore, she was kind of flummoxed that there would even be a controversy, "because it's so good!" Anyway, avoid the touristy restaurants in Québec City and go to L'échaudé!
