Directions: Five minutes north of Denia. Denia is about 45 south of Valencia. This place has been rated number two or three in Spain, though not widely known. A full 15 course menu takes over three hours and is a STEAL at 130 euro WITH wine. The latter are well-chosen from various regions and included on our visit a dry German riesling. The glasses are kept filled! THere are at least two native French speakers, if you are interested. (I am French.) The food is not as molecular as El Bulli but is spectacular, poetic and subtle. For the red mullet à la Mark Rothko the waiter came around with a book to show us the specific painting that inspired the dish. If you want to eat lighter there is a smaller menu available as well as Valencian rice dishes. This is rare if not unheard of in the 3 star category. This place is the antithesis of the French three star money making machine. Amongst the memorable dishes: the Moon of Denia squid concoction (photo), the salad of tasty and varied seaweeds, the wild mushrooms (in February one wonders how they found them).
