Awaiting Table Cooking School in Action

We have just returned from a cooking week at the Awaiting Table Cooking School in Lecce, Italy. It was a terrific experience. If you want a Culinary Institute School with fancy chefs, fancy equipment, cordon bleu recipes, this isn't the place for you. If you want to learn about the regional Pugliese cooking, and then hands on cook it yourself, if you want to learn about the culture of the area, meet the people who live and work there, and have fun, this is the place for you.

From the first Sunday dinner, which was a gastronomically wonderful meal to the Friday night dinner, which we prepared the week was great. The food we prepared was fresh, flavorful and in the Pugliese way, simple. The instruction by the owner, instructor, chef, sommelier, Silvestro Silvestori was superb. His staff of young friendly interesting people was outstanding. Any question we had was answered, any need we had was met.

The Bed and Breakfast that is included in the week was beautiful and only a short walk from the school. The baroque city of Lecce was a treat. The beautiful churches, the lovely shops and the people made the week fantastic. A trip to the seaside town of Otranto with sausage sandwiches, which we prepared (homemade sausages) was also great fun.

The cappuccini for breakfast from Antonio's Bar, the shopping in the market, buying fresh produce from Luigi (86 year old farmer) and other merchants was a routine that was easy to enjoy.

In summary, a wonderful week in a lovely town with a great staff made this an outstanding experience.
